Frying Frozen Food

Someone asked whether frozen samosas should be thawed before frying. There’s a simple answer to that: If you thaw frozen food out, remember to pat it dry before immersing in hot oil. You can put frozen food into hot oil, but remember that doing so causes the hot oil to spatter, and there’s a serious threat of its volume expanding rapidly and overflowing the container.

If you don’t have a proper deep fryer, use a heavy, deep pot with no more than 3-4 inches of oil. Leave at least 30-40% of the volume of the pot unused. That is, leave a few inches of pot above the oil level - for safety’s sake.
