Lemon Mushroom Stir Fry On Pita Recipe

I’ve always enjoyed any form of stir-fried dish and like playing around with recipes. This one could be vegetarian, but I’ve add a bit of meat for texture and protein. You can serve as a roll-up in flatbread (pita, naan, tortilla) or over steamed rice.
Ingredients
- 1-2 tbsp cooking oil (vegetable or canola).
- 1/2 cup sliced mushrooms, fresh or canned.
- 3-4 stalks green onions (aka, scallions, spring onions), finely sliced.
- 1/4-1/2 cup of kielbasa or other sausage (or jumbo hot dogs, in a pinch), cut into slices, then cut into 1/4 inch strips.
- 1/4 cup roasted red pepper strips. (I used the pre-marinated bottled variety for a bit of tang.)
- 1 tsp lemon juice, fresh or bottled.
- Salt and pepper, to taste.
- 1 tsp sambal oelek (aka chili garlic paste).
- Italian seasoning (or any combination of dried oregano, parsley, sage, rosemary, thyme).
Preparation
- Heat oil in a non-stick pan at med-high to high.
- Reduce heat to med-high. Add sliced mushrooms and green onions. Toss for 1-2 minutes.
- If necessary, add another 1 tsp of cooking oil.Add the kielbasa or other sausage. Toss for 1-4 minutes, depending on whether the meat is already cooked or not.
- Add the roasted red pepper strips and toss for 1 minute.
- Add the lemon juice, salt, pepper. Toss for 1 minute.
- Add the sambal oelek and Italian seasoning. Toss for 1 minute.
- Turn off heat and leave while warming some flatbread.
Presentation
- Warm up a pita or any other soft flatbread including naan, tortillas, etc.
- Spoon on some of the stir-fry mixture, roll up, and enjoy.
- Alternately, serve on steamed rice and pork chops (provided that you are not already putting meat in the stir-fry).
