Marinated Minced Garlic in Olive Oil Recipe
If you’re of the “mise en place” (everything in its place) school of cooking, then having a variety of sauces at hand is something you’re used to. One such sauce that I used regularly in pastas and other main dishes when I was still “on the line” was minced garlic in oil.
The preparation is extremely simple:
- Peel 1 cup of raw garlic buds and cut off the stem end on each.
- Place in a food processor and finely mince, all while slowly drizzling in a small quantity of olive oil.
- Remove the mixture and place in an airtight container, adding enough extra olive oil to cover all of the garlic.
You can use a spoonful of this sauce in pretty much any dish that you are cooking. Because the garlic is raw and chunky, it may not be appropriate for salads, depending on your tastes.
