Inexpensive Savoury Ground Beef and Lentil Stew/ Soup Recipe
Here’s yet another way that you can kick up a can of soup to create an inexpensive side dish or meal.
I took a can of premium lentil soup with spinach and added it to ground beef and a bit of pasta sauce to create a savoury stew served over rice. You could cook your own dried lentils to save even more, but I lucked out and found quality soup on sale ($0.99 instead of $2.49) in a large drugstore chain store, of all places.
After browning about a 1/2 pound of ground beef in a bit of cooking oil (canola or olive) for 3-5 minutes, I added a variety of spices (turmeric, mild curry powder, italian seasoning, salt and black pepper) and 1/2 cup of spaghetti or tomato sauce and let simmer on med high for about 2 minutes. Then I added a full can of premium lentil and spinach soup, reduce heat to medium, and let simmer for about 5 minutes. You want some of the soup broth to evaporate, but the pasta sauce will thicken the dish into a sort of stew.
Served over a bit of steamed rice, this is a tasty, nutritious, high-protein meal. You can supplement the meal with a bit of salad for balance.
