Taking Care of Leftovers - Changing Things Up - Bitesize 24

During the holidays, there always an awful lot of people by themselves, unable to spend time with friends and family. Often, these people find themselves with leftovers. Here’s one of the things I do with leftovers.

Earlier this week, my mother made a huge pot of her incredibly popular East Indian Meatball Curry (like a stew, with potato chunks). While I love her curry, I like my food spicy and savoury. So the second day, to a single serving of curry, I added a tablespoon of garlic black bean paste, a tablespoon of sambal oelek (chili garlic paste), a tight handful of fresh baby spinach leaves, and 1/2 cup of finely diced tomato and onion mixture. (I heated all of it together except the tomato+onion mix, which I added afterwards. Also, the spinach was not added until the last 30 seconds of heating.)

These ingredient a great texture to an already tasty meal, but keep away the leftover blahs. Other tips are to add slices of bocconcinni mozarella, or some pasta.
