Terribly Bad For You Mushroom, Potato, Cheese Snack - But Delicious Anyway - A Recipe

More often than not, I’ve made up dishes based on ingredients I had sitting around. A couple of days, I pulled an “iron chef” on mushrooms, boiled potatoes, brie cheese and caraway rye bread. Here’s the delicious but oh-so-bad for you recipe:

Ingredients:

  • 1-2 tbsp canola oil
  • 4-6 white mushrooms, sliced.
  • 1 small boiled potato, sliced in half, then into slices.
  • 1/2 small onion, cut in strips, optional
  • 1 tbsp oriental garlic black bean sauce/paste.
  • 1 tbsp ambal oelek (chili garlic paste), optional.
  • 1 thick piece of brie cheese.
  • 1 slice of caraway rye bread

Preparation:

  • Heat a non-stick frying pan on medium high.
  • Add sliced mushrooms and toss for 2 minutes.
  • Add potato slices and toss for 3 minutes.
  • Add onions, if desired, then toss for 1 minute.
  • Turn off the heat. Add the black bean paste and sambal oelek (if using). Toss immediately to distribute the sauces.
  • Place some of the mixture on a small microwavable plate. Add the brie cheese, then cover with more mixture. Microwave for no more than 20 seconds.
  • Place heated mixture on a single slice of caraway rye bread, toasted or untoasted. Fold bread in half, over mixture, and enjoy.
  • Presentation:
    Serve by itself for a snack, or with a non-creamy soup for a meal.
