Roasted Red Pepper Mayo
Roasted red pepper mayo is a great alternative to plain old mayo, and great for sandwiches or even dips. Here’s a simple recipe (but not necessarily a traditional one).
Ingredients
- 1/4 cup of marinated roasted red pepper pieces (or make your own).
- 1 tbsp of olive oil.
- 1 cups of mayo.
- Salt and white pepper, to taste
Preparation
- Shake off any excess liquid from the marinated peppers.
- In a blender or food processor, puree the roasted red pepper pieces. If the result is not very smooth, add 1 tbsp of olive oil and finish pureeing.
- Mix the puree with the mayo, and season with salt and white pepper as necessary.
- Place in an air-tight container and use within 3 or 4 days.
Presentation
Use for sandwich spread or as a dip for raw veggies, potato chips, or french fries.
