Garlic Sambal Shrimp

If you enjoy savoury, garlicky, spicy snacks once in a while, try this shrimp stir-fry that’s high on my list for a “fusion tapas” snack menu. Although the recipe below is for a very simple snack, you can actually add basil pesto and some pasta/spaghetti sauce if you want a pasta dish with shrimp.

In fact, you can use this recipe as a base for numerous snacks and dishes. I’ll provide recipes in the future for various pastas, curries, and more complex snacks.

Ingredients

  • 1 tbsp cooking oil (canola, vegetable) or olive oil.
  • 6-9 peeled, deveined raw shrimp, preferably thawed.
  • 1 tbsp minced garlic in olive oil.
  • 1 tsp sambal oelek. This chili paste is very hot and vinegary, can be found in most Oriental markets, and is sometimes labelled as “chili garlic paste”. If you cannot find either, you can substitute crushed red chili flake, but only use 1/2 tsp.
  • Salt and black pepper to taste.
  • Seafood sauce for dipping the shrimp.

Preparation

  • Heat oil in a non-stick frying pan on high.
  • Reduce heat to medium high and add shrimp.
  • Toss regularly and cook until shrimp has almost completely turned colour (orange), about 3 minutes.
  • Add the minced garlic paste and the sambal oelek, and toss frequently for 2 minutes.
  • Taste the paste, then season with salt and black pepper as necessary. (Sambal oelek tends to be rather salty, so it’s unlikely you’ll need season further.)
  • Turn off heat and serve.

Presentation
Arrange shrimp on a plate with a small condiment bowl of ketchup or seafood sauce.
