Dal/ Lentils - Simple Soups or Complex Stews

Indian Vegetarian Cooking: The New All-colour Guide to Delicious and Exotic Vegetarian Dishes of the Mysterious East (The Global Gourmet Series)One of the simplest and most staple items of the East Indian cuisine is lentil soup, known as "Dal". Dal can be simple as a plain soup-like dish with a bit of garlic, onion and popped mustard seeds, or as complex as a vegetable stew. Dal is extremely high in protein, and for many vegetarians, is a sufficient replacment for meat. Dal is also relatively inexpensive, compared to meat proteins and even other vegetable proteins. Made properly, dal is a delicious that is typically served over rice, but can be eaten plain.
