Dal/ Lentils - Simple Soups or Complex Stews
One of the simplest and most staple items of the East Indian cuisine is lentil soup, known as "Dal". Dal can be simple as a plain soup-like dish with a bit of garlic, onion and popped mustard seeds, or as complex as a vegetable stew. Dal is extremely high in protein, and for many vegetarians, is a sufficient replacment for meat. Dal is also relatively inexpensive, compared to meat proteins and even other vegetable proteins.
