Jamaican West Indian Food Pt III - How To Fold A Roti









  1. Lay the flatbread flat on a large platter or plate. Depending on the size of your flatbread, spoon on 3-6 heaping tablespoons of the potato and chickpea curry. Make sure that you spoon on the mixture to the bottom of the flatbread instead of the middle. Top with a spoon of diced tomatoes and onions. Sprinkle on a bit of salt and black pepper to taste. Add a dollop of hot sauce on top.
  2. Now fold up the bottom flap of the flatbread so that it covers the mound of mixture, and press down slightly.
  3. Now fold over the left side.
  4. Fold the right side.
  5. Finally, fold down the top flap to create an envelope.
